If one of our players gets 3 weeks on the sideline from now and we win our first semi and then have the week off does the week off count as 1 game served? i.e Boncos game, 1st semi then week off = 3 games.

No - suspensions count for games that the team played.

It won't happen but if Glenn was suspended for four games, we would need to lose the first weekend for him to play in the GF. The problem with that is that we could find ourselves playing away in the second week of the semis to Auckland or Cowboys.
